BROCCOLI BEEF
PIE
1 ten-ounce package
frozen broccoli
1 pound lean ground
beef
1 four-ounce can
sliced mushrooms, drained
2 cups shredded
cheddar cheese
1/3- cup chopped
onion
2 cups buttermilk
biscuit mix
1/2-cup water
4 eggs
1/2-cup milk
1/2 cup grated Parmesan
cheese
1/2-teaspoon salt
1/2-teaspoon pepper
Thaw broccoli. In a skillet brown the ground
beef until evenly browned. Stir
in mushrooms, 1-1/2 cup cheddar cheese and the onion. Remove from heat and set aside. In a bowl mix the biscuit mix and water to
form a soft dough.
Add remaining cheddar cheese and stir until blended. With well-floured hands, pat the dough into a
greased 9x13. Spoon the meat mixture
over the dough and top with the broccoli.
Combine eggs, milk, Parmesan cheese, salt and pepper. Beat well and pour over broccoli. Bake uncovered at 350 degrees for 35 minutes
or until knife inserted in the center comes out clean.
Makes
8 servings. Can be made with spinach
and Swiss cheese.
