CHICKEN TETTRAZZINI

4 chicken breasts

1-16 ounce package spaghetti

1-8 ounce can mushrooms

1-4 ounce can sliced black olives

1-2 ounce jar pimentos

Sauce:

1/2-cup margarine

1 small onion

1 small green pepper

1/2-cup flour

1/4-teaspoon pepper

1-teaspoon salt

1 can chicken broth

3/4 cup Parmesan cheese

2 cups half and half

2 cups shredded cheese

 

Boil the chicken in salted water.  Cool the chicken and cut into small pieces.  Cook the spaghetti according to package, drain and rinse.  Chop the onion and green pepper.  For sauce melt the margarine.  Add the onion and green pepper, sauté until tender.  Add the flour, pepper and salt, cook until smooth. Add the chicken broth, Parmesan cheese, 1/2 &1/2 and shredded cheese.  Remove from heat and stir until cheese is melted.  Combine the chicken, spaghetti, olives, pimentos and sauce.  Place in a large casserole dish and bake at 350 degrees for 30 minutes.
